This is one of my FAVORITE meal prep items because you create it on Sunday evening, and it tastes great heated up for lunch all week long!
Ingredients:
2 cups cooked quinoa
1 can black beans
1 lb ground chicken or turkey
1/3 cup diced onions
1 15oz can diced tomatoes & green chiles
1-2 cups jack cheese (or any lowfat cheese of your preference)
Jalapenos to preference
Pico de gallo to preference
Directions:
1. Cook quinoa per package directions
2. Cook ground chicken/turkey with diced onions over stovetop until golden brown
3. Mix all ingredients EXCEPT CHEESE in a large bowl and pour into casserole dish, then top with cheese.
4. Cook at 350 degrees for 20 minutes, then broil for 5-10.
Top with greek yogurt (instead of sour cream) and guacamole!
