Sometimes you have recipes that you try and it just doesn't quite work the first time. Either it's not as good as you hoped, or you need a few tries to tweak things before you find your groove. This is NOT one of those recipes.
This salad just completely knocked my socks off right away! It was soo quick and easy, AND it was FAR MORE DELICIOUS than I could have anticipated. Oh my, this is making it into my weekly rotation, IT'S THAT GOOD!
INGREDIENTS
- 2 cups cooked quinoa
- 2 roma tomatoes - finely chopped
- 1 cup fresh spinach
- 1/3 cup chopped red onion
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 2 ripe avocados, halved, seeded, peeled and sliced
- 1/3 cup crumbled feta
INSTRUCTIONS - Makes 4 Servings
1. One reason I love this recipe is for it's simplicity, simply add all the prepared ingredients into a bowl (preferably one with a lid) add the lemon juice, olive oil and salt last. Put the lid on and shake until well mixed.
2. DEVOUR!!
TIPS:
- Leave out the salt, because it's just as DELICIOUS without!
- Divide recipe into four containers and use for lunch, the lemon juice prevents the avocados from turning brown and it's just as amazing the next day!
