Turkey Avocado Wrap

For anyone who has read my Avocado Quinoa Salad post, you know how OBSESSED I am with that salad. Therefore, I decided to play around with it. I used that salad as an inspiration for this wrap. I swapped out the 2 cups quinoa for 1lb of turkey and added two cups of spinach. I'm really excited about the results and hope you'll enjoy it too.

INGREDIENTS:

4 whole wheat tortillas

3 cups fresh spinach

1lb extra lean ground turkey or chicken

2 roma tomatoes

2 avocados halved and sliced

1/3 cup red onions - and a little extra to cook the meat

1/3 cup feta cheese

2 tbsp olive oil

3 tbsp lemon juice

salt/pepper to taste

minced garlic

INSTRUCTIONS:

1. Combine 1lb meat, 1 tbsp lemon juice (or more if necessary), minced garlic and a hand full of red onion in pan to cook until golden brown. Remove from heat and drain excess liquid.

2. Combine spinach, tomatoes, avocados, 1/3 cup onions, 1/3 cup feta and meat in bowl and mix. 

3. Add olive oil, lemon juice and salt/pepper. Shake or mixed with salad spoons until well coated.

4. Divide into 4 servings among tortillas.
